Servings: 1 generous breakfast serving
Course: Breakfast

Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup cold dairy milk or unsweetened plant milk
  • 1 tablespoon plain tahini stir thoroughly before measuring
  • 1/2 small crisp apple washed, cored, and cut into small dice; about 1/3–1/2 cup
  • 1 teaspoon maple syrup optional
  • 1/4 teaspoon ground cinnamon
  • 1 small pinch fine salt
  • 1–2 tablespoons additional milk or cold water only if needed after chilling; this amount is for the whole single batch

Equipment

  • 16-ounce wide-mouth jar with a lid, or a small covered bowl
  • Measuring cups and spoons
  • Fork or small whisk
  • Knife and cutting board

Method

  1. Prepare the apple Wash the apple under running water, dry it, and cut away the core. Dice half a small apple into roughly ¼-inch pieces; you need about ⅓–½ cup. Refrigerate the unused half separately for another meal.
  2. Make a smooth tahini base Stir the tahini in its jar, then measure 1 tablespoon into your breakfast jar or mixing bowl. Add a little of the measured ½ cup milk and whisk with a fork or small whisk. Gradually whisk in the rest of that milk, the cinnamon, salt, and optional maple syrup. Scrape the bottom until no large pockets of tahini remain.
  3. Mix in the oats and fruit Add the ½ cup oats and all the diced apple. Stir thoroughly, reaching the bottom and sides. Every oat flake should be moistened; press any dry clusters gently into the liquid. The mixture will look looser now than it will in the morning.
  4. Cover and refrigerate Close the jar or cover the bowl and refrigerate immediately at 40°F (4°C) or below for 8 hours. Keep the oats refrigerated throughout the soak.
  5. Check the morning texture Stir from the bottom upward. The oats should be softened throughout, creamy around the flakes, and easy to scoop. If they are too stiff, stir in 1 tablespoon additional milk or cold water. Add the second tablespoon only if needed. If some flakes have a dry center, break up any clumps, moisten dry patches with a spoonful of the optional extra liquid, then cover and refrigerate longer. Check again before serving.
  6. Taste and serve Taste after stirring so the apple, cinnamon, and tahini are evenly distributed. Eat cold from the jar or spoon into a bowl. For two small portions, divide the finished mixture evenly. Add any crisp toppings immediately before eating.

Notes

Timing: About 10 minutes preparation including the morning stir, no cooking, and 8 hours of refrigerated soaking: 8 hours 10 minutes total.
Portions and jar: Use a 16-fluid-ounce jar with stirring room. One batch is one generous breakfast or two smaller portions. The optional 1–2 tablespoons extra liquid belongs to the entire single batch, not to each small portion.
Mixing order: Stir the tahini in its original jar with a clean, dry spoon. Whisk it into the measured milk before adding oats and apple. Add extra liquid only after the eight-hour soak and a thorough stir.
Cold storage: Refrigerate immediately at 40°F/4°C or below for the entire soak. Plan to eat the next morning, preferably within 24 hours for texture, using milk still within its own storage guidance. Discard after more than 2 hours out of refrigeration, or 1 hour above 90°F/32°C. Quaker overnight-oat guidance and FDA storage guidance.
Dietary notes: Tahini contains sesame. For a dairy-free jar, choose plant milk and check the remaining labels; for gluten-free preparation, use oats labeled gluten-free and suitable accompanying ingredients.
Packing: Keep the jar chilled in an insulated bag with at least two cold sources, then refrigerate on arrival when possible. Add crisp toppings when eating.
