Ingredients

  • 6 ounces dry farfalle pasta 170 g; bow ties
  • 1 cup plain frozen peas cook according to the package; see notes if the directions are for a whole bag
  • 2 tablespoons plain tahini stir the jar thoroughly before measuring
  • 1 tablespoon fresh lemon juice plus more to taste
  • 1 small garlic clove finely grated
  • 1 cup reserved pasta cooking water reserve this much; start with 3 tablespoons for the sauce, then add 1 tablespoon at a time as needed
  • 1 tablespoon fresh dill chopped; optional
  • 1/2 teaspoon lemon zest optional, for serving
  • 1/8 teaspoon black pepper
  • 1 teaspoon fine salt for approximately 3 quarts pasta water, plus more to taste

Equipment

  • 4–5-quart pasta pot
  • Colander
  • Heatproof measuring cup
  • Small bowl
  • Whisk or fork
  • Fine grater
  • Broad spoon
  • Saucepan or microwave-safe vessel for the peas

Method

  1. Prepare the ingredients Bring approximately 3 quarts water to a boil in the pasta pot. Stir the tahini jar thoroughly, then measure 2 tablespoons into a small bowl. Finely grate the garlic and measure the lemon juice; wash the lemon first if using its zest.
  2. Cook peas and pasta separately Prepare the frozen peas according to their package, including any required standing time, and drain excess liquid. Meanwhile, add 1 teaspoon salt and the farfalle to the boiling pasta water. Cook to al dente according to the pasta package, checking the thick center.
  3. Save the cooking water Near the end of the pasta cooking, scoop out 1 cup water with a heatproof cup. Let its active bubbling stop before mixing it into the sauce. Drain the ready farfalle without rinsing.
  4. Loosen the tahini in a bowl Whisk the lemon juice, garlic, and black pepper into the measured tahini. Gradually whisk in 3 tablespoons warm pasta water. If the mixture tightens or remains thick, continue whisking and add more water 1 tablespoon at a time until it pours from the spoon in a smooth ribbon.
  5. Dress off the heat Return the drained pasta and fully cooked peas to the empty warm pasta pot, with the burner off. Pour over the loosened tahini mixture and fold immediately. Add more reserved water 1 tablespoon at a time until the bow ties are lightly coated and separate easily.
  6. Finish and portion Fold in optional dill. Taste the mixed pasta before adding salt or more lemon. Divide between two bowls, add optional zest, and serve promptly. Keep the remaining water nearby for a final small adjustment if the sauce tightens before serving.

Notes

Tahini texture: Stir the jar before measuring. A lemon-and-water mixture can initially tighten; whisk and add more warm pasta water gradually until the sauce pours. Love and Lemons describes this normal thickening stage. Toss the pasta and finished sauce off the heat.
Peas: Follow the directions and standing time on your exact bag. If directions only cover the full bag, cook it as directed, use about 1 cup cooked, drained peas here, and promptly refrigerate the remainder. Do not substitute a universal brief pasta-water blanch for the package instructions.
Dietary notes: Tahini contains sesame. Choose plain peas and check the pasta and tahini labels to keep the dish dairy-free; egg pasta is not vegan. Follow your tahini jar’s storage directions; once mixed with water and fresh garlic, refrigerate the sauce promptly.
Leftovers: Refrigerate in shallow containers at 40°F/4°C or below within 2 hours, or 1 hour above 90°F/32°C. Use within 3–4 days; if reheating, heat to 165°F/74°C and stir in water as needed. See USDA leftover guidance.
