Ingredients

  • 1 15-ounce can chickpeas 425 g net weight; rinse and drain well, about 1 1/2 cups or 240 g drained
  • 1/2 medium crisp apple about 80 g; core and cut into 1/4-inch dice
  • 1 medium celery stalk about 40 g; finely diced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon flat-leaf parsley finely chopped
  • 6 large sturdy romaine leaves washed and thoroughly dried; follow the label for packaged ready-to-eat lettuce
  • 1/8 teaspoon fine salt starting amount after mixing; adjust to taste
  • 1 small pinch freshly ground black pepper or to taste

Equipment

  • Medium mixing bowl
  • Fork
  • Small dressing bowl or cup
  • Knife and cutting board
  • Colander
  • Clean towels or salad spinner

Method

  1. Prepare the leaves and vegetables Rinse the apple, celery, parsley, and loose lettuce leaves under running water. Dry them, taking particular care with water trapped along the lettuce ribs. Dice the celery, chop the parsley, and set the leaves on a clean towel while you make the filling. Follow the label for packaged, ready-to-eat lettuce.
  2. Mash part of the chickpeas Put the drained chickpeas in a medium bowl. Use a fork to crush roughly half against the side of the bowl, leaving the rest whole or broken into large pieces. Stop when you have a rough mixture of soft mash and recognizable chickpeas, rather than a smooth paste.
  3. Dress the apple promptly Whisk the olive oil, lemon juice, and Dijon in a small bowl. Core and dice the apple, then toss it with this dressing so the cut surfaces are coated. Add the dressed apple to the chickpeas, scraping in the dressing left in the bowl.
  4. Finish and adjust the filling Fold in the celery and parsley. Taste, then add the salt and pepper gradually. Press a spoonful together: it should hold loosely without dripping. If the beans keep rolling away, crush a few more and fold again. Avoid adding extra liquid before checking the texture.
  5. Fill just before eating Divide the salad among six large romaine leaves, placing it along each sturdy center and leaving the edges visible. Start with about 1/3 cup per leaf and add more only where it fits comfortably. Serve immediately, or refrigerate the filling and leaves separately until assembly.

Notes

Yield: Makes 6 large lettuce cups, or 2 light lunches of 3 cups each. Start with about 1/3 cup filling per large leaf; leaf size varies, so serve any excess alongside. Smaller leaves make more individual cups.
Filling texture: Mash roughly half the drained chickpeas. If the filling rolls apart, mash a few more before adding liquid. Use tender, fully cooked beans; about 1 1/2 cups cooked and drained can replace the can.
Apple and leaves: Dice apple shortly before mixing and coat it promptly with the lemon dressing. This may slow browning, without guaranteeing unchanged color. Nebraska Extension recommends acidic coating and cutting close to serving. Wash loose produce under running water and dry well; prewashed ready-to-eat lettuce can be used as labeled. See FDA produce guidance.
Storage: Keep filling and dry leaves separate at 40°F/4°C or below. Refrigerate within 2 hours, or 1 hour above 90°F/32°C. Use within 3–4 days, counting earlier preparation time; day one or two gives better crunch. Lemon does not replace refrigeration. For travel, chill first and use an insulated bag with at least two cold sources, following USDA lunch guidance.
