Cook Time 10 minutes
Couscous standing time 5 minutes
Total Time 25 minutes
Servings: 4 modest main-dish servings

Ingredients

  • 1 cup dry small-grain instant couscous About 170 g; not pearl or Israeli couscous.
  • 1 1/4 cups low-sodium vegetable broth Divided: reserve 1/4 cup for lentils; use remaining 1 cup for couscous, adjusting only that portion if the couscous package requires a different ratio.
  • 1 tablespoon olive oil
  • 2 cloves garlic Minced.
  • 1 15-ounce can cooked brown or green lentils Drained and rinsed gently.
  • 8 ounces frozen chopped spinach Measure the frozen weight before cooking and draining.
  • 1 teaspoon ground cumin
  • 1/4 teaspoon fine salt Plus more to taste.
  • 1/4 teaspoon black pepper
  • 1 teaspoon finely grated lemon zest
  • 1 tablespoon lemon juice
  • lemon wedges For serving.

Equipment

  • 1 2-quart saucepan with lid
  • 1 colander or fine sieve
  • 1 Fork and spoon
  • 1 Measuring cups and spoons
  • 1 medium heatproof bowl

Method

  1. Check the couscous label. Reserve 1/4 cup broth for warming the lentils. The remaining 1 cup is for the dry couscous. If the package calls for another liquid quantity, use that amount for the couscous portion while keeping the separate 1/4 cup for lentils.
  2. Cook and drain the spinach. Cook the frozen spinach according to its package directions until fully heated. Drain in a colander. Once safe to handle, press out excess water with the back of a spoon and break up clumps. Do not add frozen blocks directly to hydrated couscous.
  3. Warm the lentils. Heat olive oil in the saucepan over medium-low heat. Add garlic and cumin and stir for about 30 seconds, keeping the garlic pale. Add drained lentils, spinach, the reserved 1/4 cup broth, salt, and pepper. Cook gently for about 3–5 minutes, until hot throughout. Transfer to a heatproof bowl and cover.
  4. Hydrate the couscous. Bring the remaining 1 cup broth, or the package-specified amount, to a boil in the same saucepan. Remove from the heat, stir in the dry couscous, cover immediately, and let stand for the package time, usually 5 minutes. Keep the lid closed while it stands.
  5. Fluff and finish. Separate the couscous grains with a fork. Fold in the hot lentil-spinach mixture gently, then add lemon zest and juice. Taste before adding more salt. The grains should be tender and separate without a pool of broth underneath. Serve warm with lemon wedges.

Notes

Timing and yield: About 10 minutes preparation plus 15 minutes cooking and standing, or 25 minutes total. The card separates that 15-minute stage into an estimated 10 minutes cooking and 5 minutes standing. Spinach and couscous package directions take priority. Makes 4 modest mains or 6 sides.
Ingredient choices: Use canned brown or green lentils, or about 1 1/2 cups drained, fully cooked lentils. Dry lentils and pearl couscous are not direct substitutes. Couscous contains wheat; this recipe is not gluten-free.
Texture: If the couscous is still firm, sprinkle in 2 tablespoons boiling broth, cover, and rest another 2–3 minutes; repeat only if needed. These extra adjustments are additional to the estimate. Drain the spinach well to prevent a wet finished dish.
Storage: Refrigerate in shallow containers within 2 hours, or 1 hour above 90°F. Keep at 40°F or below and use within 3–4 days. Add a little water, cover loosely, and reheat, stirring midway, to 165°F throughout.
