Pan Seared Belgian Endive Without Wine

Four Belgian endive heads are halved and seared until golden, briefly steamed with water, then finished with lemon and parsley—no wine needed.
Prep Time 8 minutes
Cook Time 12 minutes
Total Time 20 minutes
Servings: 4 side servings (2 halves each)

Ingredients

Ingredients
  • 4 medium Belgian endive heads about 1 pound (450 g) total
  • 1 tablespoon olive oil
  • 1/4 teaspoon fine salt divided between searing and finishing
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons water plus 1 more tablespoon if needed
  • 1 tablespoon lemon juice
  • 1 teaspoon honey optional
  • 1 tablespoon finely chopped flat-leaf parsley

Equipment

  • 1 12-inch skillet with a lid Use a single uncrowded layer. If the halves overlap, use two skillets or cook separate batches; allow extra time.
  • 1 thin spatula or tongs Turn the halves without pulling apart their leaves.

Method

Skillet method
  1. Remove damaged outer leaves. Rinse and thoroughly dry four Belgian endive heads, then halve each lengthwise through the base. Pat the cut surfaces dry. In a small bowl mix one tablespoon lemon juice with the optional teaspoon honey.
  2. Heat a 12-inch skillet over medium for about one minute. Add one tablespoon olive oil and swirl to coat; let it warm until it moves easily without smoking.
  3. Arrange the endive cut-side down in a single layer. Sprinkle the rounded sides with half of the measured 1/4 teaspoon salt. Sear 4–5 minutes without shuffling, checking a half after 3 minutes for golden to light-brown patches. Reduce heat if the tips darken too quickly.
  4. Carefully turn the halves, keeping their leaves attached. Add two tablespoons water around the skillet edges and cover immediately. Reduce to medium-low and cook 3–5 minutes; open the lid away from your face.
  5. Insert the tip of a small knife into a thick base. It should enter easily with slight resistance. If the base is still too firm, add one extra tablespoon water only if the pan is dry, cover and cook up to two minutes more.
  6. Uncover and let excess water evaporate for 30–60 seconds. Remove from heat. Spoon over the lemon mixture, then add one tablespoon chopped parsley, 1/8 teaspoon pepper and the remaining measured salt to taste. Serve warm.

Notes

Timing: About 20 minutes assumes one uncrowded batch. Head size and pan temperature vary; use the knife check rather than the timer alone.
Doneness: The thick base should yield to a small knife with a little resistance. If it is still firm and the pan is dry, add 1 tablespoon water, cover and check again after about 2 minutes.
For eight side servings: Double the ingredients and use two wide skillets, or cook two complete batches of four heads in one pan. Each batch gets 1 tablespoon oil and 2 tablespoons water. Divide the lemon finish and seasonings between batches.
Vegan option: Omit the optional honey and keep the olive oil as written.
Storage: Refrigerate in a shallow container within 2 hours, or within 1 hour above 90°F. Keep at 40°F or below and use within 3–4 days. Reheat to 165°F throughout in a covered skillet with a splash of water. The leaves will be softer after reheating.
