- Preheat the oven. Place a rack in the middle and heat the oven to 425°F (220°C). Use a rimmed metal sheet pan. If using parchment, check that it is rated for this temperature; do not use wax paper.
- Start the frozen beans. Toss the frozen beans with 1 tablespoon olive oil and 1/4 teaspoon salt. Spread on the tray and roast for 10–15 minutes, breaking up clumps with a spatula. Most surface moisture should evaporate. If a noticeable puddle remains, roast a little longer before adding gnocchi.
- Season and add the gnocchi. While the beans roast, toss the uncooked gnocchi with 1 1/2 tablespoons oil, the remaining 1/4 teaspoon salt, black pepper, and oregano. Add to the tray in a single layer. Use a second tray if the ingredients are crowded.
- Roast until tender. Roast for 18–25 minutes more in total, turning after about 12 minutes. The centers of larger gnocchi pieces should be hot and tender, with golden patches outside. If the beans are ready first, transfer them to a serving bowl. Reserve the final 3–5 minutes of this roasting time for the garlic in the next step.
- Add the garlic near the end. Mix minced garlic with the remaining 1/2 tablespoon olive oil. Toss through the food and roast for the final 3–5 minutes, watching for burning. This garlic time is included in the 18–25-minute gnocchi roast, not added afterward.
- Finish with lemon. Return any reserved beans to the tray. Off the heat, toss with lemon zest and 1 tablespoon lemon juice. Taste before adding more salt or lemon. Add optional Parmesan or parsley and serve promptly.
Notes
Timing: Allow about 10 minutes preparation and 30–40 minutes cooking, or 40–50 minutes overall; the card displays the upper estimate. Allow extra preheating time if needed. Brand, pan, oven, and surface ice affect the timing. Garlic cooks during the final minutes of the gnocchi roasting stage.
Product choice: This recipe uses shelf-stable potato gnocchi and plain frozen cut beans. Check package preparation requirements. It is not written for homemade ricotta or frozen cauliflower gnocchi. Use two roomy trays when doubling.
Storage: Refrigerate leftovers in shallow containers within 2 hours, or 1 hour above 90°F. Keep at 40°F or below and use within 3–4 days. Reheat to 165°F throughout. A skillet or oven restores more surface texture than a microwave.
