Cook Time 16 minutes
Rest 1 minute
Total Time 27 minutes
Servings: 4 folded quesadillas

Ingredients

  • 1 can cannellini beans 15 ounces; drained, rinsed, and drained again. Use cooked canned beans, not dried beans.
  • 4 medium flour tortillas Approximately 8 inches across.
  • 1 tablespoon olive oil For the filling.
  • 2 teaspoons lime juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon fine salt Or less if the beans are salted.
  • 2 tablespoons finely sliced scallions
  • 2 teaspoons neutral oil For the skillet, divided between batches.
  • lime wedges For serving.
  • salsa, chopped cilantro, or sliced avocado Optional, for serving.
  • water Only if the filling crumbles; add 1 teaspoon at a time as needed.
  • additional drained, cooked mashed white beans Only if the filling remains too loose after mashing; add 1 tablespoon at a time as needed.

Equipment

  • 1 Sieve For draining the rinsed beans.
  • 1 Mixing bowl
  • 1 Fork or potato masher
  • 1 large skillet To fit two folded tortillas flat at a time; use additional batches if needed.
  • 1 Wide spatula
  • 1 cutting board and sharp knife
  • 1 rack over a tray For a brief rest between batches without stacking.

Method

  1. Dry and mash the beans. Let the rinsed beans sit in a sieve for several minutes. Transfer to a bowl and mash with the olive oil until most beans form a paste, leaving a few small pieces for texture.
  2. Season the filling. Stir in the lime juice, cumin, paprika, garlic powder, salt, and scallions. Taste before adding more salt. The mixture should hold a ridge when dragged with a fork. If it crumbles, add water 1 teaspoon at a time. If loose, first mash any remaining whole beans. If it still spreads like a sauce, add more drained, cooked mashed beans 1 tablespoon at a time until it holds a ridge. Do not use dry beans or flour to thicken it.
  3. Fill the tortillas. Divide the filling into four equal portions. Spread one portion over half of each tortilla, leaving a ½-inch border. Fold the uncovered half over the filling and press gently.
  4. Toast in batches. Warm the skillet over medium heat. Brush in a thin layer of the neutral oil, reserving the remaining oil for later batches. Cook one or two folded tortillas at a time, lying flat without overlap, for about 2–4 minutes per side, until golden and the center is hot. Reduce the heat if dark patches appear before the filling warms. Transfer finished quesadillas to a rack in a single layer during the brief wait for the next batch.
  5. Rest and slice. After cooking, wait 1 minute before cutting each quesadilla on a board. Serve the lime wedges and optional toppings on the side so moisture does not soften the crust.

Notes

Yield: Makes 4 folded quesadillas, enough for 2 dinner servings or 4 light servings.
Timing and batch size: Allow 10 minutes prep, 8–16 minutes cooking in two batches, and a final 1-minute rest: approximately 19–27 minutes total. The card uses the upper two-batch estimate. If only one tortilla fits, allow 16–32 minutes cooking and approximately 27–43 minutes total. Times are estimates, not a documented kitchen test.
Filling: Mash at least three-quarters of the beans so the filling holds together. Water and additional cooked mashed beans are contingency ingredients only, used as needed in the method. Keep salsa outside the filling and keep the tortillas in a single layer between batches so they do not steam soft.
Variations: Great northern beans may replace cannellini beans. Add ¼ cup cooked spinach that has been squeezed dry and chopped, or 2 tablespoons cooked, well-drained corn. Keep additions modest so the beans remain the main binder.
Make ahead and storage: Keep prepared filling separate from the tortillas and refrigerate it covered for no more than 3–4 days. Cooking it later does not reset that original storage time. Refrigerate cooked leftovers promptly in shallow containers within 2 hours, or within 1 hour above 90°F. Keep at 40°F or below and use within 3–4 days. Reheat leftovers to 165°F; use moderate skillet heat so the center heats before the outside darkens.
Ingredient labels: Flour tortillas contain wheat unless specifically made otherwise. Check tortilla labels when avoiding dairy or eggs because ingredients vary by brand.
