Ingredients

  • 1 can unsweetened full-fat coconut milk about 13.5 fl oz / 400 mL; use the entire can
  • 1 cup unsweetened plain almond milk 240 mL; unsweetened soy milk is an alternative if tolerated
  • 1/3 cup granulated sugar 67 g; see sweetness note
  • 1/4 cup unsweetened cocoa powder about 22 g; not hot chocolate mix
  • 3 tablespoons cornstarch 24 g; level measures
  • 1/8 teaspoon fine salt
  • 1 teaspoon vanilla extract 5 mL
  • Fresh raspberries or sliced strawberries optional, for serving

Equipment

  • Medium heavy-bottomed saucepan
  • Whisk and flexible spatula
  • Six small heat-safe dessert cups or ramekins
  • Fine-mesh strainer (optional)

Method

  1. Set out six small heat-safe cups or ramekins. Stir the entire can of coconut milk until its cream and liquid are evenly combined.
  2. In a medium heavy-bottomed saucepan, whisk together the sugar, cocoa, cornstarch, and salt. Gradually whisk in half the almond milk to make a smooth paste. Add the remaining almond milk and all the coconut milk.
  3. Place over medium heat. Stir continuously, scraping the bottom and corners, until the mixture thickens and bubbles break across the surface. This usually takes about 7-9 minutes, depending on the pan and burner.
  4. Adjust the heat to maintain steady bubbling and continue stirring for 1 minute. Remove from the heat. Do not stop at the first hint of thickening or boil for several extra minutes.
  5. Stir in the vanilla. For a smoother pudding, pass through a fine-mesh strainer while hot if needed. Divide evenly among the cups; each is roughly a scant 1/2 cup.
  6. To reduce a surface skin, use food-safe wrap suitable for warm-food contact, following its package instructions. Refrigerate the small portions promptly without waiting for them to cool completely on the counter. Chill for at least 4 hours, until cold throughout and set.
  7. Add fresh berries just before serving. Gently stir a chilled portion if you prefer a softer texture.

Notes

Sweetness: The main recipe is cocoa-forward and moderately sweet. For a sweeter version, use 1/2 cup (100 g) sugar.
Ingredient checks: Use products appropriate for a gluten-free and dairy-free diet. The almond-milk version contains almonds and coconut; the soy-milk variation contains soy. Check toppings separately. Canned coconut milk is different from coconut cream, sweetened cream of coconut, and thin coconut beverage.
Storage: Cover and refrigerate at 40 F / 4 C or below; enjoy within 3 days. Refrigerate within 2 hours, or within 1 hour above 90 F / 32 C. Add toppings just before serving.
