- Prepare an ice bath. Fill a large bowl with cold water and plenty of ice before cooking.
- Lower eggs into boiling water. Bring enough water to cover the eggs by about 1 inch to a boil. Lower six large refrigerated eggs gently with a spoon and start the timer.
- Cook gently. Reduce the heat to a gentle simmer, keeping the eggs submerged. Use about 12 minutes as an initial cooking estimate; avoid a vigorous boil that tosses the eggs around.
- Chill promptly. Transfer the eggs to the ice bath with a slotted spoon. Cool until cold enough to handle throughout, about 10 minutes, adding ice as needed.
- Check one egg. Peel one egg and cut it in half. Both yolk and white should be firm. If the center is soft, continue cooking the remaining unpeeled eggs, then cool and check again.
- Peel carefully. Tap the cooled eggs to crack the shells, roll lightly, and begin at the wider end. Lift shell and membrane together in short sections. Rinse away fragments and refrigerate promptly if not serving.
Notes
Timing: Allow about 5 minutes preparation, 12 minutes cooking, and 10 minutes cooling. Time needed to bring the water to a boil varies and may extend the total. Egg size, elevation, and the pot can change the cooking time.
Doneness: Both yolk and white should be firm. If the first egg is still soft, return the remaining unpeeled eggs to hot water and continue cooking; cool and check again. Do not treat a soft-centered batch as fully hard-cooked.
Peeling: Work under the membrane from the wider end. Clean water can help remove fragments. No method guarantees that every shell releases smoothly.
Storage: Refrigerate within 2 hours, or 1 hour above 90°F, at 40°F or below. Use within 1 week whether peeled or unpeeled. Keep peeled eggs covered and label the cooking date.
